Beetroot

Season: June-October. 

 

To grow: Beetroots are such a reliable vegetable to grow because they are relatively hardly and considering their size, don't actually take too long to grow. Make sure you plant them in succession throughout the season and give them enough space to grow, or you'll only get small beets instead of the big and juicy ones that are possible given enough space. 

 

To eat:  If you've grown the beets yourself, save the leaves and cook them up as a side with olive oil, sea salt, and lemon juice. They are so good for you and also so delicious. One of my favourite beetroot dishes is a beetroot borani which is a delicious Persian beetroot and yogurt dip. I also don't think you can do wrong with a beetroot soup. Just make sure it's seasoned with plenty of sea salt or the flavour can be quite bland!
