Summer vegetable slaw

Finely slice the cabbages and peppers, using a mandolin if you have one. Skin the courgette and cut it into thin slices. Take the leaves off the radishes and slice them too. 

Put all of the veg into a big bowl along with the dill and mint. Dress with lemon juice, olive oil, and sea salt and give everything a big mix before serving. 

Ingredients

Serves 4-6 as a side.

1 white cabbage 

1 red cabbage 

2 red peppers 

1 cucumber 

1 bunch of radishes 

1/2 bunch of dill, finely chopped 

1/2 bunch of mint, finely chopped 

Juice of 2 lemons 

A generous glug of olive oil 

Sea salt
